Buttercream and Chocolate Ganache both make wonderful alternatives to icing for covering cakes, and they are becoming increasing popular for wedding cakes where the bride and groom want something a little less formal.
Buttercream is the topping typically used to swirl on top of cupcakes and can be piped onto cake in different patterns. Sugar flowers and other sugar decorations can also be added.
Ganache is a rich topping made with dark chocolate and cream. It can be poured onto a cake, or left to firm up a bit and then spread over a cake. Contrasting white chocolate flowers, piping or other details can add interest to a ganache covered cake.
